Regional Sauces

Sauce type Signature Dish

Kansas City

Kansas City-style barbecue is characterized by a classic, thick and sweet tomato-based sauce. BULL'S-EYE barbecue sauce starts with tomato puree and is sweetened with real sugar and molasses, giving it a traditional Kansas City flavor right out of the bottle.
BURNT ENDS
Charred cubes of tender meat from the fatty point end of a brisket.

Memphis

Memphis-style barbecue sauce is slightly thinner and tangier than Kansas City-style and often has a spicy kick. Add extra vinegar and a bit of heat to BULL'S-EYE barbecue sauce for a typical Memphis dipping sauce. (See recipe on page 5)
RIBS
Served "wet," coated in sauce during cooking, or "dry," cooked in a dry rub and served with sauce on the side.

Texas

Texas-style barbecue also features a tomato-based sauce, though extra chili and cumin flavors give it a signature spicy kick. Create a bold Texas-style sauce by mixing BULL'S-EYE barbecue sauce with steak sauce and chipotle chilis. (See recipe on page 5)
BRISKET
Whole beef brisket is smoked slowly at a low temperature, then served thinly sliced and topped with sauce.

North Carolina

North Carolina-style barbecue uses a very thin, vinegar-based sauce with added spices to enhance its meat. Simply add HEINZ apple cider vinegar to BULL'S-EYE barbecue sauce for a thin basting sauce that penetrates meat. (See recipe on page 5)
WHOLE HOG
Cuts of meat from various parts of the pig are served together, traditionally from an entire pig slow-roasted over a pit.

South Carolina

South Carolina-style barbecue is known for its sweet and tangy mustard-based sauce. Equal parts BULL'S-EYE barbecue sauce and HEINZ yellow mustard, sweetened with honey, make for a classic mustard barbecue sauce. (See recipe on page 5)
PULLED PORK
Pork shoulder is smoked until tender, then shredded and mixed with sauce.

Kentucky

Western Kentucky is famous for its barbecue mutton, which is basted and served with a Worcestershire-heavy sauce. Add bourbon to BULL'S-EYE barbecue sauce and LEA & PERRINS Worcestershire sauce for extra Kentucky-centric kick. (See recipe on page 5)
MUTTON
Slow roasted mutton shoulder, basted with dipping sauce and served sliced or shredded with additional sauce.

Hawaii

Hawaii-inspired barbecue sauce showcases the asian and tropical flavors that influence the state. Mix BULL'S-EYE barbecue sauce with hoisin sauce and crushed pineapple for a sweet and tangy Hawaiian flavor. (See recipe on page 5)
KALUA PORK
Kalua is a traditional Hawaiian cooking method, where an entire pig is seasoned simply with salt and slowly roasted underground.

Alabama

Alabama barbecue is best known for its tangy mayo and vinegar white sauce. Add some zest to KRAFT mayonnaise and HEINZ white vinegar with some GREY POUPON Bistro Sauce for a speed-scratch take on Alabama white sauce. (See recipe on page 5)
SMOKED CHICKEN
Grill or smoke a quartered chicken and finish by dunking in the white sauce.
