COMFORT RECIPES

Breakfast Mac & Cheese

10 servings

WHAT YOU NEED

  • 1 1/4 lbs Bulk Breakfast Sausage
  • 2/3 cup Red Pepper, diced
  • 2/3 cup Green Pepper, diced
  • 2/3 cup Onion, diced 1/2 lb Ham, diced
  • 10 cup KRAFT Mac & Cheese
  • 10 Large Eggs
  • 1/2 cup KRAFT ChedaSharp Shreds

LETS MAKE IT

  1. In a large pan over medium heat, cook the sausage, peppers and onions until the sausage has crumbled and cooked through and the peppers and onions have softened.
  2. Add the diced ham and Mac & Cheese and hold for service.
  3. Preheat oven to 350 F.
  4. Divide the Mac & Cheese into oven proof dishes and bake as needed for about 20 minutes or until heated through.
  5. While the Mac & Cheese is baking, cook an egg as desired.
  6. Top the Mac & Cheese with the cooked egg and the shredded cheese and continue to bake until the cheese has melted.

Cajun Meatloaf Stack with Bourbon Glaze

10 servings

WHAT YOU NEED

Bourbon Glaze:
  • 2 1/2 cups HEINZ Ketchup
  • 1/2 cup Apricot Preserves
  • 1/2 cup Bourbon Whiskey
  • 1/4 cup TABASCO'' Wing Sauce
  • 1/4 cup Water
Meatloaf:
  • 1 cup Green Pepper, diced
  • 1 cup Onion, diced
  • 1 cup Celery, diced
  • 1 tbsp Garlic, chopped
  • 3 Eggs
  • 1/3 cup Whole Milk
  • 1/2 cup HEINZ Ketchup
  • 10 slices Garlic Toast
  • 7 1/2 cups Mashed Potatoes
  • 2 1/2 cups Crispy Onion Straw
  • 3 lbs Lean Ground Beef
  • 2 cups Breadcrumbs
  • 3 tbsp Cajun Seasoning
  • 1 tbsp L&P Worchestshire Sauce
  • 12 slices Bacon

LETS MAKE IT

Bourbon Glaze: In a small pot add the ketchup, apricot preserves, bourbon whiskey, TABASCO' wing sauce and water. Bring to a boil and hold warm.
Meatloaf:
  1. Preheat oven to 375'F.
  2. Place the peppers, onions, celery, garlic, eggs, milk and 'A cup ketchup into the base of a blender or food processor and blend to make a slurry.
  3. Place the ground beef into a large bowl. Add the slurry mixture, breadcrumbs, Cajun seasoning and Worcestershire sauce and mix until blended well.
  4. Spray a sheet pan with non-stick cooking spray and form the meat mixture into a loaf on the sheet pan and spread with 'A cup of the bourbon glaze.
  5. Wrap the bacon slices around the loaf, tucking the ends under the bottom. Brush another 1/4 cup of the glaze over the bacon.
  6. Bake for about 11/2 hours or until an internal temperature of 160'F.
To serve: Slice the meatloaf into 10 portions. Place a meatloaf slice on top of a slice of warm garlic toast. Top with a drizzle on bourbon glaze, a mound of mashed potatoes, another drizzle of bourbon glaze and finish with the onion straws.

Cauliflower Tots with Chipotle Dipping Sauce

10 servings (8 per serving)

WHAT YOU NEED

  • 2/3 cup HEINZ Ketchup
  • 2/3 cup KRAFT Mayonnaise
  • 2 1/2 tbsp Chipotle in Adobo
  • 10 cups Riced Cauliflower, steamed
  • 5 Large Eggs, beaten
  • 2 1/2 cups Shredded Cheddar Cheese
  • 2 1/2 cups KRAFT Grated Parmesan Cheese
  • 2 cups Panko Breadcrumbs
  • 5 tbsp Fresh Chives, chopped
  • 1 1/4 tsp Kosher Salt
  • 1/2 tsp Ground Black Pepper

LETS MAKE IT

  1. Prepare the dipping sauce by mixing together the ketchup, mayonnaise and chipotle in adobo. Hold for service.
  2. In a large bowl combine the cooked cauliflower, eggs, cheddar cheese, parmesan cheese, breadcrumbs, chives, salt and pepper. Mix until well combined.
  3. Roll 1 tbsp portions of the cauliflower mixture into tot shaped pieces.
  4. To order, deep fry the tots until golden brown and then drain onto paper towels.
  5. Serve with a side of the chipotle sauce for dipping.
